This was made and consumed in under half an hour.
Its a posh take on bubble and squeek but it’s really, really good.
You will need…..
5 medium potatos
1 packet of cooking bacon
Half a cabbage finely sliced
2 spring onions chopped
1tbs balsamic vinegar
1 tbs chilli flakes
Grate the potatos with the skins left on and pop in the microwave for 4 mins.
When they have cooled downpop them in a burger press and shape, however you can do it by hand.
Fry on both sides until golden, then pop in a medium heat oven and cook the cabbage.
In a frying pan put the cabbage, butter, chilli flakes and spring onion and have a good stir. Fry it off for about 4 minutes until it goes soft, cover take off the heat and leave until needed.
Fry the bacon on one side for about 3 minutes, turn over and while the other side is cooking pour over the honey and balsamic vinegar.
Poach or fry the eggs your desired way and when everything is ready, build your little stack.
