Posh Mushrooms on toast is a fab dish ,which is great for when your mates are coming around for a little lunch, that will involve laughter, a cheeky glass of vimpto and No kids !. I had my three gorgeous friends coming over and thankfully, they are all fellow foodies and are not in the slightest bit fussy, so after a quick scout around Sainsburys during the magic hour, i picked up some Quinoa bread ( was £1.25 now 65p),
mozzarella (89p down to 49p) and some mushrooms. This was a super frugal dish, that didn’t scrimp on flavour and it had the ability to be jazzed up with a handful of spinach or rockett on top on the dish to make it look a tad posh, I prepared this dish for This Morning and it went down a storm. You can make this in record time and you can even pop this mushroom medley in a lasagne for any vegetarian guests or even for a right old change. This is also a great base for a pasta dish, just steam some chicken so that it goes really moist, add it to the sauce and mix in some pasta. Boom, one base dish can make a wholeeeee lot of meals !
But anyway Back to Posh Mushroom son toast !
* Slice the bread thickly, ready to toast.
* Dice one tray of mushrooms.
* Finely chop 2 garlic gloves.
* 2 cap fulls of Amaretto, Masala wine or Brandy.
*100ml of cream or creme fresh
* 1 chopped ball of Mozzarella
* handfull of chopped basil.
* salt and ground pepper.
Fry the mushrooms and garlic in a knob of butter.
Add the cream and Amaretto.
Let it start to gently bubble, then add in the mozzarella, basil and seasoning.
While it is gently simmering, toast the bread.
Put a thin layer of butter on the bread and add the mushrooms.
