I frigging love it when I manage to pick up something really indulgent and caveman like with a discounted price tag on the meat counter, and these Beef Short ribs were a result of quickly nipping into Waitrose. These dinosaur like pieces were £6.36 for a whopping four pieces and not only were they easy to cook but they also made a silence hang over the dinner table while the four of us turned into Neanderthals.
A great Tip with these ribs are to let them cook slowly and gently, another top tip is to coat them in flour before you cook them so that the sauce is nice and thick and it actually coats the veg while your eating it.
You will Need…..
4 pieces of Beef Short ribs
1 tbsp. whole grain mustard
1 tbsp. honey
1 sprig of rosemary
1 pint of stock
1 tsp tomato puree
2 glasses of red wine
1 oxo cube
good dash of black pepper.
6 large potatoes
1 diced leek
half a finely chopped cabbage
half a cup of milk
Start of by coating the meat well in flour. Place the whole, peeled shallots into the slowcooker or pan and place the meat on top.
Add the stock, wine, mustard, pepper, honey, tomato puree, rosemary and crumble the oxo cube over the meat.
Cover with a lid and let this cook slowly for a minimum of 4 hours, around half way through, give it a stir and turn the meat over.
Your kitchen, no your house should smell fantastic and you should now have several dogs sniffing around outside !
In a large pan, salt the potatoes and bring to the boil until soft, when they are nice and fluffy drain them and put them to the side.
In the same pan, melt some butter and add the chopped cabbage and leek, then fry until this has become nice and soft, add a good dash of pepper , potatoes and mash this all together, adding the milk to make it smooth.
Plate this up in a fancy manner or just slop it on as it doesn’t matter, the caveman instincts will arise and you will soon have the rib in your hand and be wearing the gravy !
