This is probably one of my most favourite recipes that I wrote for C5 Shop smart show, it was designed for a fab couple called Lydia & Jimmy and it had to be low-cost, full of flavour and also Weight watchers friendly. Luckily for me, they loved trying new foods, and as a boring palate is not on my agenda, this was right up my street and I could be adventurous as I liked. I had a gorgeous local weight watchers consultant called Rachel pop over and worked out the points and it came in at 12 points for the whole dish. The damn chorizo was the big player with 10 points for 75g but as it’s the star of the show with its smokey flavour, I really didn’t want to tell it to jog on,so I decided to keep it. This is a fab dish on its own, with rice or even a jacket spud, and its on the oh so easy cook scale, as you just bung it all on the slow cooker and forget about it for three hours ! Again, i bought my chicken from Muscle foods, portion them into portions of 3 and 4 and then freeze them, which makes life so simple.
You will need….
4 chicken breast (skin removed)
2 red onions finely diced
3 crushed fresh garlic gloves
2 tsp paprika
1 tsp thyme
1 diced celery stick
2 chicken stock cubes made into one pint of stock (2 points)
diced mixed peppers
good handful of chopped parsley
75g diced chorizo (10 points)
So as this is a super simple dish, pop everything into the slowcooker, cover and turn it on high, blow it a kiss and tell it you will see it in 3 hours.
Shred the chicken with two forks, to get the pulled chicken effect and serve with your chosen condiment.
TOP TIP !
If you ever see pre chopped onions on offer, grab them and pop them in the freezer. These are great to use from frozen and will make your life that little bit easier.
