National Fish & Chip day 2019 homemade recipe.
I will never, ever have somebody tell me that I’m looking a bit thin and that I should eat more !!
Or someone say to me “I can’t believe you eat all of that, yet you never put weight on !”
That my friends, is my sad little number two on my fantasy wish list ! of course number one is world peace ( or a limitless credit card, I get them mixed up !)
Anyway, I luv fish and chips and it is such a luxury as it is soooooo ruddy expensive these days ! So when I hawked in on some reduced price Cod in Sainsburys, I thought that I would attempt my own, and it turned our ruddy luvely. My kitchen did look a tad messy afterwards, but I had saved around £15, so it was worth it.
You will need……
2 large pieces of cod fillets.
2 cups of plain flour
1 tbsp. Baking powder
2 cups of garden peas
1tbs dry mint
Half a lemon
Half a bottle of beer. ( I used one with a citrus taste)
6 potatoes (chipped)
Start off by putting the chips in the Actifry, oven or by heating the oil.
Pop the peas into a pan with a small knob of butter, add the juice of half a lemon and season.
Fry for a couple of minutes and add the mint.
Put the peas into a blender and blitz.
I had lots of cream left over, so I added a dollop to the mix ( for extra calcium of course ! )
Cover The mushy peas and put to the side.
Cut the fillets into four and give them a good coating of the flour.
In a large pan , half fill it with vegetable oil and put it on a high heat.
In a bowl add the flour, baking powder, seasoning and beer, whisk together for a couple of minutes to get rid of any lumps.
Drop some drops of batter into the oil and if it bubbles and floats to the top, your oil is hot enough for the fish.
Dip the fish in the batter, then place in the hot oil.
Cook until the batter has turned a nice shade of I can’t wait to scoff it anymore and serve with the chips and Mushy Peas.
Your kitchen will stink afterwards, but if you pop half a lemon and a dash of vinegar into some boiling water and boil it for ten minutes, the oily smell should jog on.
