These delicious Easter brownies are made using leftover Easter eggs!

OK, lets talk Left over Easter egg Brownies ! I am sure every house hold is having the same problem as me and I feel so sorry for my will power, as it is currently having a right bashing with all of the kids half eaten Easter eggs dotted around the house. I honestly swear, I do not realise that I have stuffed some broken egg into my gob until I am half way through eating it, and currently it feels as natural as Breathing……. I need to rid my house of these beauties quick pronto, and what a better way than to make Left over Easter egg brownies.

If you also have some leftover chocolate buttons, then you should also make some white chocolate slow cooker fudge

This recipe is super simple, is great for lunch boxes, a quick  afters school snack with a glass of milk and they are even good to freeze ! ( just make the mix and freeze before you cook it !).

I have even been super sneaky and added some Milled linseed into the mix, as it is full of Omega 3 and Fibre, so the kids are getting a little bit of goodness without knowing about it ( HA, Ha !!!!! ). Anyway, this is so easy to make takes about 12 minutes in the oven and can be as chocolate filled as you like.

 

 

You will need…..

Any left over Easter eggs or chocolate ( break it up )

3 small eggs or 2 large

200g sugar

100g plain flour

175g butter

2 table spoons of coca powder

2 table spoons of Linseed, flax seed etc ( Magic ingredient, wink wink !)

Pre heat your oven to gas mark 190 ( medium heat) and line a flat baking tray with greese proof paper.

Melt the butter in a large bowl and add the broken chocolate ( keep a bit for the top of the brownie though !).

Add the sugar, eggs, cocoa, magic ingredient and flour to the butter and mix well. Really give it a good mix to get rid of any lumps and then pour over the lined tray.

Sprinkle the left over chocolate bits on the top and then place this in the oven to cook for around 12 minutes.

We want these Left over Easter egg Easter brownies gooey, so if it looks like it is still really soft when it comes out of the oven, don’t worry, as it will still keep on cooking and it will remain squidgy and soft.

If you want to push the boat out add more eggs on the top and let this melt in. You can be fancy and do a Caster sugar stencil on top or Serve this with Ice cream if you fancy a hot dessert or let it cool and cut up.
