I don’t know about you, but we love a chicken kebab in our household. Whilst ordering one from the takeaway is a pretty healthy option, it is even healthier and cheaper to make your own healthy chicken kebabs at home.
This fakeaway healthy chicken kebabs recipe is a fab meal for anyone on a kick up the arse weight loss diet, specialty dietary requirement option or just someone fancying a decent bit of grub !.It’s a super easy dish to prepare, and you can often spot chicken breast wearing a reduced sticker. I picked up this chicken for a silly price at The Co-Op and paired with some rice ,salad and some wraps or pitta, this can make a frugal change to the regular table offerings. A good tip with this dish is to marinate the chicken overnight, so the flavours really do penetrate the meat and give it an excellent flavour !. Lidl do the best olive oil for a fab price and this is great to add to the spices. You could also make your own flavoured olive oil if you would like to give it a try.
Make this even more frugal by making your own flatbreads to wrap the chicken in and you are on your way to Jamie Oliver Status. Make a real low fat mint dressing with this by adding a spoonful of dried mint, canderel , a pinch of salt and a drop of water to some fat free natural yogurt and mix into a flavoured sauce.
How to make healthy chicken kebabs
To make these healthy chicken kebabs you will need:
- 3/4 diced chicken breast
- 20ml of olive oil
- 1tsp paprika
- 1tsp cumin
- 1tsp chilli flakes
- 1tsp garlic paste
- 2 tsp tomato puree
- Salt and pepper
Mix all the ingredients with the chicken and massage in well. Again try and let the meat mingle with the spices, cover and pop in the fridge for a while or overnight !
Slide the chicken onto a skewer and cook under the grill for around 10 minutes. (Cut a large piece of chicken open to check that the meat is not still pink)
If you have time on your hands, put the chicken into a foil parcel and put it into a hot oven to part cook it, then finish off the cooking under a hot grill, this will make the meat a lot moister.
Serve with rice, bread or if you fancy being super healthy, a big salad.
