Again, it is another love it or hate it recipe but if you like peanut butter, then this is definitely a recipe for you.This recipe is tasty, balanced and it might help you to lose weight!
Slimming World Curry recipe
I joined Slimming World a couple of weeks back, and I’m honestly blown away with the variety and choice of foods available. However, my will power jogged on several years ago and with the constant traveling (I know it’s not an excuse !) means that I have epically failed again! I lost half a stone to start with which did give me an air punch moment, but dirty habits have crept back in and I need to give them a huge big kick to Never Never land! I know that I can do this especially when I plan my meals ahead – this Slimming World Peanut butter and Coconut Curry is one such meal that I can plan to include on a regular basis as it is both low calorie and something the whole family will eat.
I am still going to my weekly meetings, but I need to take the lovely group leader Nicole home and babysit me 24/7 !
It is fair to say that I love a Slimming World curry.
Slimming world curry ingredients:
1 packet of chicken sausages (skin removed)
2 tsp peanut butter
1cup of light coconut yogurt
2 garlic cloves crushed
onion finely diced
2 tsp ginger
3 tsp garam masala
1 tsp cumin
1 tsp ground coriander
2 tsp salt
1 can chopped tomatoes
1 cup of chicken stock

- Break up the skinless sausages
Roll the meat into Ikea meatball sized portions, pop these in the oven for about 10 minutes to bond and brown off, this will stop them breaking up when they dive into the sauce. In a large pan, fry the onion in some fry light until slightly brown, add the garlic and ginger and fry for a further 2 minutes, stirring continuously.
- Mix the stock
Add the chicken stock, tomatoes, and spices and let it simmer for around 5 minutes. Add the Meatballs, green beans and most of the coriander, stir then cook/simmer for a further 5 minutes.
- Remove from the heat
Stir in the peanut butter and coconut yogurt.
Serve with basmati rice and sprinkle the remaining coriander over the curry for a nice finished look.
Approximately 1 ½ syns per serving.
Lastly scoff this Slimming World Peanut butter and Coconut Curry without feeling guilty.
