Moroccan slow cooked beef for just £1.25 per serving? So good!

This morroccan slow cooked beef was super simple but tasted like a lot of effort had gone into it. You pop all your ingredients into your slow cooker or your oven on a low heat over a couple of hours, then prepare your couscous about 20 minutes before serving.
I picked up a twin pack steak pack for £2.49, so the meal was full of meat as i used them both. ( 2 happy boys !!!)
You will need…..
Diced beef
Several peppers diced
1 tin of tomatoes
1 tin of chickpeas ( washed in a sieve)
2 plums diced
2 tsp paprika
1 tsp tumeric
1tsp cumin
1tsp nutmeg
1 tsp salt
1/2 finger width of harissa paste
2 garlic cloves chopped
3 cups of cous cous
1tsp salt
Handful of fresh mint chopped finely ( or 3 tsp dried mint)
1 lemon
1 chicken stock cube
1 tomato diced
Chilli flakes to garnish
Harissa paste is a chilli infused paste that can be quiet hot, all supermarkets stock this and it lasts for a long time, i paid around £1.50 for this in a deli. A little bit added to some mayonnaise, then put with some chicken in some crusty bread is a nice treat !!!
As i say, this is simple. Pop everything in your oven proof dish with a lid or into your slow cooker, put it under a low heat and forget about it for several hours. Stir it after an hour or two if you like or stir it when its cooked, its your call.
Pop the cous cous, lemon, stock cube and mint into a bowl or pan and cover with boiling water ( about 3 cm above the cous cous), give it a really good stir, cover and leave to expand.
After 10 minutes, give it a stir and see if you need any more water. It should have a fluffy, soft consistency. If it is still crunchy, replaced the lid and the steam will do its magic.
Ok, so your ready to rock and roll…..
Pop the couscous on a plates and pour the beef and sauce around it, garnish with chilli flakes and top the couscous with a diced tomato.
