This tortilla tower costs less than £3 to make and serves four people!

I love trying to offer a slightly different dinner, as I think my kids are getting a bit bored of Fajitas, so when I had a bit of a stash going on with the tortillas, I decided to make a tortilla tower and it was scoffed to great reviews. This can be prepared and popped in the fridge ready to cook later in the day or week, and it can also be frozen, which is a great meal option for the busy family.

I bulked this meal up with some left over rice from the weekend, some tinned lentils (that are so good for you) that had been at the back of the cupboard for decades and some reduced priced mince, so this was a frugaltastic bit of grub.

Please use this recipe as a guideline, but feel adventurous and use different ingredients.

You will need…….

Mince beef , lamb or turkey.
Tin of tomatoes
Tin of lentils
Tortillas
Finely chopped onion
Ready cooked rice
1tsp chill ( add extra if required)
1tsp paprika
1tsp cumin
1tsp salt
2 tsp of seasoning mix
( feel free to use a fajita mix instead of the spices )
100 g grated cheese

Fry off the mince and onions, drain any fat that runs of the meat.

Add the lentils, tomatoes and spices and leave to simmer for 10p minutes.

Line a cake tin with baking paper and put in a tortilla.

Put in a layer of mince and put another tortilla on top.

Put in a layer of rice and a sprinkle of cheese, another tortilla and continue to build until you run out of ingredients.

Finally, put the last tortilla on top with a good sprinkle of cheese and season.
Pop the tower into the oven on a low heat for an hour and then serve with a salad, sweet potatoe wedges or whatever takes your fancy.
