Love cod and salmon recipes? Then look no further!
This is an excellent dish to reintroduce you to fish. A lot of people tend to avoid buying fish as it can be expensive, the bones off putting and alien to cook. People avoid cod and salmon recipes most of all as they seem to think it is difficult to cook.
Cod is a fab fish as it really absorbs the flavours easily, is super healthy and lean, however its also very expensive, so if you see a piece of Cod marked down grab it and either cook it that day or freeze it. Plus salmon is so good for you.

You will need…..
Smoked salmon slices
1/4 choritzo chopped finely
1/4 sliced cabbage
1 grated carrot.
Lay the salmon out on some tin foil then place the cod on top. Season and roll up.
Wrap tightly into a parcel and place in the oven on a medium heat for around 12/15 minutes.
While this is cooking, start with the lemon hollandaise sauce ( it’s easy !!!)
Separate two eggs.
Put the butter in a pan and melt it.
Once melted put it in a jug and place to the side.
Put the egg yolks in a bowl over a pan of gently simmering water, whisk the eggs and slowly add the melted butter. Keep whisking and add a squeeze of lemon juice,salt and pepper. If the eggs begin to thicken too much, add an icecube. Feel free to put in a little bit of course mustard to give it a stronger flavour.
Cover with cling film and leave.
Place all your veg and choritzo in a pan and toss in some butter and seasoning, cover and fry off for a couple of minutes, until the cabbage is soft.
Take your fish out of the oven and open the parcels.

Put the veg on a plate, place the fish on top and pour over the sauce.
