Delicious and healthy Turkish Kisir.
Kisir is a national dish in Turkey, and every household has there very own take on how to make it ,however, if it has bulgur and looks too pretty to eat then your on the right road.
A tomato base, flavours and colours the bulgur then you can pretty much add any vegetables that you. This is also really adaptable on the spice front, so you can have it completely void of heat or crank up the volume on the chilies and have smoke coming from the ears and a numb tongue, its your call.
Kisir is often served in lettuce leaves with it being best served cold. It is a really clean and light dish and with all the summer weather that is thankfully being thrown at us at the moment, makes this a perfect accompaniment to fish, meat or even on its own. Perfect for people watching what they eat, a hungry vegetarian or even to brighten up a buffet table, this honestly is a fab dish !
You will need ……
2 cups of bulgur
3 cups of boiling water
1/2 cup of tomato puree
3 tsp chilli flakes
2 vegetable stock cubes
1 garlic clove crushed
1 tsp salt
2 tomatoes finely chopped
½ cucumber finely chopped
1 handful of parsley finely chopped
4 spring onions finely chopped
½ tsp pepper
¼ cup of olive oil
¼ cup of lemon juice
Start buy putting the bulgur, puree, salt, pepper, chilli flakes and crumbled stock cubes in a pan and cover with the boiling water. Give it a good stir and place it on a low heat and cover. Leave it for ten minutes but keep a close eye on the pan to make sure that the bulgur does not burn. You are aiming for the bulgur to be soft.
Give the bulgur a good stir, cover well and put to the side.
In a bowl, add all of your chopped vegetables, garlic, olive oil and the lemon juice.
When the bulgur is soft and fluffy, add this to the bowl and mix well with the vegetables. Add more salt or chilli to desired taste.
