This is a lovely, clean, lowfat meal, ideal for a vegetarian or it would go lovely with a meat dish.
It’s super easy and quick.
You will need…….
1 large or 2 small cauliflowers chopped into florets
I onion diced
2 peppers diced
1 tsp cumin
1 clove of garlic chopped finely
2 vegetable stock cubes
1 tsp salt
1 tsp pepper
1 tsp paprika
1 cup of tomato passata
Caraway seeds to garnish ( optional)
Fry the onion and garlic until it is soft.
Add the peppers and fry for a futher 2 mins.
Add the spices, salt and pepper fry for another minute.
Add the passata and stock cubes and leave to simmer for a couple of minutes, stirring occasionally.
Add the cauliflower, cover and let it gently simmer for 10 minutes, your aim is to have the cauliflower soft but not mushy.
Plate up and add the caraway seeds for garnish and a great taste.
I also add some garlic yogurt but this is optional.
